Filonzo is an exclusive cured meat which combines, in perfect harmony, the aroma and strength of Calabrian red wine with the sweetness and taste of the finest pork meats.
Produced from the loin, it is placed in brine for a few days and immediately afterwards in red wine. Immediately after, the meat soaked in salt and wine is wrapped in a cloth.
The process, which is typical of a niche product, gives the product a unique and compact body and after the slow and natural aging in suitable rooms, aexceptional salami with little salt and a very delicate taste that literally melts in your mouth.
